Taco Notes:
I’ve got a client who drives a truck. Runs a trucking company. Something, I’m not sure of the details. Trucks, big, over-the-road trucks. I think he hauls cattle or something, steaks and burgers free-range style. One afternoon in El Paso, he showed up with a to-go box, had some food in it. Tacos from a favorite taco place. We’ve discussed dive places before, and my rigorous schedule prevented me from joining him to break bread.

After the reading, I opened up the Styrofoam box, nestled within were four small corn tortillas with a serving of grilled meat pieces on top. Across each open-face taco was a grilled leek. From Shakespeare’s canon, “Leek is good.” (I think it’s in Henry V, but at this hour I can’t recall for sure. I think it’s a Henry play, anyway.)

I’m unsure of the source of the meat or meat-like product. However, I am sure it was really tasty, in and of its own self, and then, with that grilled leek on top, rolled in? Even better. Of course there was the requisite hot sauce, fresh-made, no doubt it was Hatch Chili peppers, too.

I got to find out where he gets this stuff.
