    Wow. Is the sky really that blue? Los Angeles skies nearly always have a yellowish tint, except after Santa Ana winds have swept through, clearing all the crud in the air out to sea. Happens a few times each year. I had nearly forgotten how beautifully blue the sky can be.

    The blew sky outside contrasts with the low-and-slow smoke pit/oven inside. This way the sky is unblemished and the smoke inside is the thing that gets our appetites in gear. I’ll take a sweet sausage smoked and two sides, please…
