When I first saw the sign, I knew it was perfect image for San Antonio. A single sign, just a few words, so properly encapsulates what this town is, what is is like, and how it is a multicultural crosswords, of sorts.

Just evokes, in a single image, what makes this town what it is. Not even sure how pancakes figure in, but the other two are traditional fare.
