“You don’t order fine dining at a place called the Waffle House.”

Has to do with managing expectations. Order breakfast. Get a waffle and some bacon. It’s absolutely wonderful. Eggs cooked to perfection, whatever style. Excellent bacon, done with an iron. Waffles so good, they don’t require syrup, which is also plentiful. Look at the menu, the name itself. Perhaps this is even an archetype for what diner food should be.

“This food is healthy, right?” I looked up at the Virgo waitress.

“There‘s nothing on that plate that’s healthy,” she said.

Bacon, eggs, waffle, white toast with butter, and hash browns. It’s all healthy — mental health food. Maybe comfort food to some, but on certain occasions?

All healthy. And really good. Not fine dining — just good grub.
