Cookies

Molasses cookies are pretty good, but I got to wondering, just what is molasses?

The cookie recipe was simple enough, just flour, molasses, all spice, cinnamon, nutmeg, and, or course, shortening. And molasses.

Unsulphured blackstrap molasses. Cures many ills.

1 cup of molasses
1 cup sugar (pure cane evaporated, “organic,” i.e., not processed and refined white)
1 stick of unsalted Falfurrias Creamery butter
Half cup of tap water
4 cups of Rice flour
One and half teaspoon of salt
One and half teaspoons of ground ginger
1 teaspoon baking soda
Half a teaspoon ground cloves
Half a teaspoon ground nutmeg
Quarter teaspoon ground all spice.

Mix, leave in ice box overnight, then roll out, then 375 ten to twelve minutes.

The cookies needed a frosting. I’m white. Cool Whip, or better yet, it’s local grocery off-beat brand: cheap, copy-cat stuff. All those healthy ingredients and then top it off with a sugary, processed, chemical goodness.

I do know how to party.
